Preservative availability may be appreciably reduced by interaction with packaging materials. In a standing mixer or using a hand mixer, cream the butter and sugar on medium speed for 3 to 5 minutes, until light and fluffy. Scrape the sides of the bowl with a rubber spatula to make sure everything is incorporated. Add the eggs, one at a time, on low speed until incorporated. 

In a standing mixer fitted with the whisk attachment, cream the butter, sugar, and lemon zest on medium-high speed for 3 minutes. Use a rubber spatula to scrape down the sides of the bowl.
