Botulism is most commonly caused by ingestion of a neurotoxin produced by Clostridium botulinum in improperly canned food. Poisoning may also occur after wound contamination with the organism. The organism potentially has a low infective dose of <100 cells, and this, coupled with the occasional severe side-effect of haemolytic uraemic syndrome, makes E. coli 0157 a severe hazard within unpasteurised juices. [Pg.286]
