Virgin olive oils are oils obtained from the fruit of the olive tree by solely mechanical, or other physical means under conditions, particularly thermal, that do not lead to alterations in the oil, such oil not having undergone any treatment other than washing, decantation, centrifugation and filtration. Thus there is the total exclusion of oils obtained using solvents or re-esterification processes, and any mixtures with oils of other kinds.
