Minty odor

Many cycHc ketones occur in natural oils. Jasmone [488-10-8] (3-meth5l-2-(2-pentyl)-2-cyclopenten-l-one) (4) is an odoriferous component of the oil obtained from jasmine flowers. /-Menthone [14073-97-3] (5) is the most frequently occurring of four optically active isomers, and is a colorless Hquid with a minty odor obtained from Mentha species of plants. Muscone [541-91-3] (6) and civetone [542-46-1] (7) are expensive animal products. [Pg.500]

Both stereoisomers occur in many essential oils, often as a single enantiomer species. A particularly high concentration (sometimes >50%) is found in oils from Mentha species. The menthones are colorless liquids that possess a typically minty odor the odor of isomenthone is slightly musty. They have a strong tendency to interconvert and are, therefore, difficult to obtain in high purity. Industrial products are mixtures of varying composition. Physical constants of industrially important menthone isomers are listed in Table 1. [Pg.60]

Carveol (5) is one of the minor components responsible for the odour of spearmint, and is easily prepared by reduction of carvone. Isopulegol (6) is prepared from citronellal, as discussed in the section on menthol below, and is a precursor to other materials in the group. The phenols carvacrol (7) and thymol (8) are important in some herbal odour types, but the major use for thymol is as a precursor for menthol q.v. Piperitone (9) and pulegone (10) are strong minty odorants, the latter being the major component of pennyroyal oil. 1,8-Cineole (11) is the major component of such eucalyptus oils as Eucalyptus globulus. These oils are inexpensive and so there is no need to prepare cineole synthetically. Menthofuran (12) is an important minor component of mint oils and can be prepared from pulegone. [Pg.70]

The threadlike (filiform) stipules at the base of the petioles of the upper leaves are a deeper yellow-orange than normal. The bracts (specialized leaves surrounding the flowers) are better developed, longer and more numerous than usual, forming little tufts. The (/ )-(-)- and (5)-(+)-enantiomers of monoterpene ketone carvone are found in various plants. While (5)-(+)-carvone is the main constituent of the essential oil Carum carvi and Anethum gra-veolens, (/ )-(-)-carvone is found in the oil of Mentha spicata var. crispa (Bornscheuer et ah, 2014 O Neil, 2006). Because of minty odor and taste, large amounts of (/ )-(-)-carvone are frequently added to toothpastes, mouth washes, and chewing gums.
