The process of fermentation provides us with food, beer, wine, and drugs including several antibiotics. The efficiency of the processes involved in [Pg.155]

Bioremediation is also required for the cleanup of our environment. Bioremediation is mediated by the participation of several microbial communities. These microbial communities are required to break down several polyaromatic hydrocarbons (PAHs) and other toxic, mutagenic, and carcinogenic substances introduced into our environment by human activity. The removal of these substances from used water is critical before it is returned [Pg.156]

The proteome of soil microbiota has been elucidated recently using 2D gel and spectrometry at the University of California. These investigators have examined the community of soil microorganisms in a biofilm from a mine. They have identified about 1200 proteins one important protein identified among them is a novel cytochrome that is responsible for the oxidation of iron and for the formation of the biofilm itself. Lactic acid [50-21-5] (2-hydroxypropanoic acid), CH CHOHCOOH, is the most widely occurring hydroxycarboxylic acid and thus is the principal topic of this article. It was first discovered ia 1780 by the Swedish chemist Scheele. Lactic acid is a naturally occurring organic acid that can be produced by fermentation or chemical synthesis. It is present ia many foods both naturally or as a product of in situ microbial fermentation, as ia sauerkraut, yogurt, buttermilk, sourdough breads, and many other fermented foods. In China some teas, such as Pu-er tea, are made through microbial fermentation and called post-fermented teas. The typical characteristic of these teas is a mouldy or aged flavour the more intense this flavour, the better the quality.
