A novel method for producing ethyl alcohol from Jerusalem artichoke tubers is disclosed. Milled tubers are mixed with water and calcium sulfate, and they are hydrolyzed by endogenous inulinase. The saccharified wort is cooled, nisin is added for aseption with industrial yeast, and the wort is fermented. The method increases the yield of ethanol per raw material unit. [Pg.436]
