Improved world nutrition

Iodine deficiency remains a major cause of mental retardation and infant mortality and morbidity throughout the world—even though iodine was shown to be essential for human health nearly 100 years ago. More than 1 billion people are beUeved to be at risk for iodine deficiency. In 1986, the International Council for the Control of Iodine Deficiency Disorders was established in an effort to improve iodine nutrition and alleviate human suffering. This council works closely with the World Health Organization, the United Nations International Children s Fund, and the... [Pg.926]

An account of how the research evolved can be found in Prasanna et al. (2001). An updated review of the topic has been given by Gupta et al. (2009). The QPM maize germplasm has now been dispatched to different countries around the world and has had a great influence in improving the nutrition of a large number of people as well as animals. [Pg.150]

Continued research is needed to determine differences in composition, protein-binding, and enzyme inactivation properties of tannins from different sources. The mechanisms involved in the detoxification of polyphenols are not well understood. Simpler processing methods are required to improve the nutritional quality of high-polyphenol seed types. Sorghums, millets, and legumes provide the main subsistence of peoples in the under-developed countries. Any efforts to improve their nutritional quality may therefore be expected to alleviate the severe problem of malnutrition existing in this part of the world. [Pg.485]

This is a professional organization of more than 40,000 dietitians. Its goals are (1) to improve the nutrition of human beings, (2) to advance the science of dietetics and nutrition, and (3) to promote education in these allied areas. The ADA was founded in 1917 during World War 1. In 1925, the ADA began publication of the Journal of the American Dietetic Association, which it continues today. Furthermore, the ADA publishes other educational material for nurses, doctors, teachers, and other related professionals. [Pg.33]

Sprouted Grains, During World War II, people were advised to use sprouted seeds as sources of vitamin C in the event that the supplies of fresh produce became limited. Nevertheless, few people are aware of the other improvements in nutritive value which result from the sprouting of the cereal grains. Table C-8 shows how the sprouting of oats in a special nutrient solution (the process known as hydroponic sprouting) affects the level of nutrients. [Pg.184]

SUMMARY. Flouts have served man for many millennia. Although the major flours now used in the developed countries are made from cereal grains, attempts to improve the nutrition of peoples in these countries have resulted in the utilization of legume flours. It seems likely that in the future a greater variety of flours will be utilized in attempts to feed the burgeoning world population. [Pg.371]

There are a number of additives which are added to various raw materials to improve their nutritive value . A well known case is that of flour used for bread-making to which, during World War II and thereafter, were added calcium and iron salts and Vitamins and B2 as nutritive supplements. Some other examples are ... [Pg.189]

For the poor of the world, more energy and more energy services can mean an improved quality of life. Energy use can allow services that improve health care, education and nutrition in less-developed nations. [Pg.63]

It is well established that vitamin A deficiency (VAD) is a public health problem in more than ioo countries, especially in Africa and Southeast Asia, hitting hardest young children and pregnant women. Worldwide, over 124 million children are estimated to be vitamin A deficient. Many of these children go blind or become ill from diarrhea, and nearly eight million preschool age children die each year as the result of this deficiency. The World Health Organization estimates that improved vitamin A nutritional status could prevent the deaths of 1.3—2.5 million late-infancy and preschool age children each year (Humphrey et al. 1992). The heartache of losing a child to a preventable disease is not one commonly encountered in the developed world. [Pg.94]
