The data in this paper are consistent with a wealth of evidence showing that dietary Se consumed in excess of the Recommended Dietary Allowance lowers the risk of several important cancers (2, 14, 26, 27). Previous research has established a strong association between the dietary form of Se and the cancer-preventive properties of this element (5, 28). This paper extends the evidence that Se in chemical forms known to accumulate in garlic and some Brassica species is especially effective in the prevention of chemically induced carcinogenesis (14, 17). [Pg.194]

Garlic is used for a variety of reasons, and some of the attributes associated with it, e.g. for cancer prevention, or to reduce heart attacks, may not be substantiated. Other properties such as antimicrobial activity, effects on lipid metabolism, and platelet aggregation inhibitory action have been demonstrated. Ajoene has been shown to be a potent antithrombotic agent through inhibition of platelet aggregation. [Pg.461]

Immunostimulant effects of garlic include an increase in proliferation of lymphocyte and macrophage phagocytosis, induction of the infiltration of lymphocytes and macrophages in transplanted tumors, induction of splenic hypertrophy, increased release of interleukin (IL)-2, interferon-y, and tumor necrosis factor-a, and enhancement of natural killer cell activity. It is thought that these effects may be mechanisms of cancer prevention (49). Lau and colleagues tested an aqueous garlic extract from Japan, the protein fraction isolated from this same extract, and three additional extracts obtained from health food stores in Loma Linda, CA, for ability to stimulate murine T-lym-... [Pg.135]

Alkyl cysteines are water soluble organosulfiir compounds in garlic and are formed from the hydrolysis of y-glutamylcysteines. These compounds were found to possess activities in cancer prevention, atherosclerosis and neurotrophic disorders. [Pg.469]

The allium plant family exhibits selenium chemistry and high-selenium garlic has found promise in mammary cancer prevention. At present, no selenium-enriched food or nutritional supplements have been fully characterized with respect to selenium compounds. [Pg.4346]
