In a study with 40 healthy men and women, average age 63.7 years, who were randomized to either an alkali diet (meat plus fruits and vegetables) or an acid diet (meat plus cereal grains) (Jajoo and others 2006), altering the renal net acid excretion over a period of 60 days affected several biochemical markers of bone turnover and calcium excretion. It is estimated that the mean total intake of polyphenols in the Spanish diet ranges from 2,590 to 3,016 mg/person/day including polyphenols soluble in aqueous-organic solvents, plus insoluble condensed and hydrolyzable tannins. Fruit Decay. Finally in the field of diseases are the decays of fruit in transit. Much of the Brazilian fruit is exported, giving a long period from harvest to utilization and in Argentina a slow rail transport plus the use of uninsulated metal cars adds to the problem. Stem-end rot (Diaporthe citri Wolfe and Diplodia natalen-sis Pole-Evans) plus blue and green molds (Penicillium italicum, Wehmer, and P. digitatum, Sacc.) are rampant, and while the Dowicide A (sodium orthophenyl phe-nate)-Hexamine (hexamethylenetetramine) treatment worked out in Florida is satisfactory, import difficulties stand in the way of obtaining needed materials. [Pg.83]

In general, a normal diet plus about 40 mEq per day of K+ is adequate to prevent hypokalemia. The microbiocidal effect increases as the pH falls below 4.0, and because of this S02 is ideally suited for most soft drink formulations.
