The quality of extracted citrus juices depends on enzyme reactions that occur not only in the fruit during the development period, but also in the juice during processing. When juice is extracted from citrus fruit, enzymes are released from their normal restraint in the cell. Several of these enzymes catalyze reactions that adversely affect taste and appearance of the juice. Unless the reactions are controlled, the juice products will not meet the standards of quality set up by the USDA Food Safety and Quality Service. The two reactions of commercial importance are the hydrolysis of pectin to pectic acid, which clarifies juice, and the lactonization of limonoic acid A-ring lactone to the bitter compound, limonin. Research efforts to identify and characterize the reactions, to isolate and purify the enzymes, and to develop methods to control the reactions are described in this review. [Pg.151]

Food Safety and Quality Service This organization ensures that foods for human consumption are safe, wholesome, nutritious, and of good quality. It sets standards for and inspects meat, poultry, eggs, dairy products, and fresh and processed fruit and vegetables. Federal and State Meat Inspection. Most foods from animals are inspected by government officials to assure wholesomeness, proper labeling, and freedom from disease and adulteration. Despite Soviet officials efforts to promote scientific food systems as the ideal means to guarantee food quality and healthfulness, many consumers viewed industrially produced foods and public food facilities with suspicion. Soviet customers voiced their dissatisfaction with the appearance of industrially produced foods and complained about finding insects and pieces of debris in their foods.Rothstein and Rothstein write that the overwhelming majority of cafeterias were places where food supplies were limited and the food was of low quality and inexpertly prepared, where chaos, flies, dirt, and terrible service reigned (Rothstein and Rothstein 1997 183). Both the state s emphasis on food safety and its inability to maintain these standards fostered a widespread cultural awareness about food quality that has continued into the post-Soviet period (see also Dunn 2008 Jung 2009). [Pg.85]

The Centre has been given the mandate to assist Member Countries and their institutions to fulfill requirements to support the development and implementation of international standards/agreements relevant to food safety and control. The first edition, published in 1966, was supported by a Public Health Service grant and more than 100 supplementary grants from industry, associations, and foundations. Its role, which is still that of the Food Chemicals Codex, was to define the quality of food-grade chemicals in terms of identity, strength, and purity based on the elements of safety and good manufacturing practice.
