It is used in hard candies and as a foam stabilizer in marshmallows. The similar products gum tragacanth, gum karaya, and gum ghatti are used in much the same way—as acid-resistant thickeners in sauces and salad dressings. [Pg.150]

Packaging applications are the most extensive. Meat, poultry, and egg containers arc thermoformed from extruded foamed polystyrene sheet. The fast-food market also accounts for a substantial amount of polystyrene for takeout containers where the insulation value of a foamed container is an advantage. Containers, tubs, and trays formed from extruded impact polystyrene sheets are used for packaging a large variety of food. Biaxially oriented polystyrene film is thermoformed into blister packs, meat trays, container lids, and cookie, candy, pastiy, and other food packages where clarity is required. [Pg.1354]

Viscosity of Neutral Resins. The neutral resins, both unmodified and carbohydrate-modified, were very viscous. The resins have a consistency of taffy candy. This might present problems in their utilization with present commercial equipment, although equipment for applying foamed resins might be suitable. [Pg.359]

Foams. Refined lecithins have been employed as effective foam control agents. Examples include whipped toppings, ice creams, and many types of candies. Refined lecithin products have also been employed as effective defoaming agents in foams caused by powdered proteins in water. Lipids contribute to foam structure of whipped cream and constitute an essential phase in food emulsions, such as milk, mayonnaise, and gravy.
