Esters lactylate fatty acid

Chemical bleaching is never used on oils intended for edible use because it oxidizes unsaturated fatty acids to cause off-flavors. However, it does find wide usage for specialty linseed oil, for the paint industry, and fatty chemicals such as sorbitan esters of fatty acids and sodium stearoyl lactylate. Residual peroxide is destroyed by heating above its decomposition temperature. [Pg.125]

Lactylated Fatty Acid Esters of Glycerol and Propylene Glycol occur as a substance that varies in consistency from a soft solid to a hard, waxy solid. They are a mixture of partial lactic and fatty acid esters of propylene glycol and glycerin produced by the lactylation of a product obtained by reacting edible fats or oils with propylene glycol. They are dispersible in hot water, and are moderately soluble in hot isopropanol, in chloroform, and in soybean oil. [Pg.241]

Lactylic Esters of Fatty Acids occur as liquids to hard, waxy solids. They are mixed fatty acid esters of lactic acid and its polymers, with minor quantities of free lactic acid, polylactic acid, and fatty acids. They are dispersible in hot water and are soluble in organic solvents and in vegetable oils. [Pg.243]
