They vary widely in composition, but in general may be divided into Liqueurs free from sugar, such as absinthe liqueurs containing sugars and bitter substances, termed bitters, and true liqueurs, which contain sugars and essential oils or vegetable extracts. [Pg.270]

SEME is a recent method of extraction, patented in 2004, with the specific objective of obtaining essential oil from plant material [45, 46]. Based on a relatively simple principle, SFME involves placing the vegetable material in a microwave reactor without addition of solvent or water. SFME is a combination of microwave heating and distillation, and is performed at atmospheric pressure. Materials for flavoring may be divided into several groups. The most common groupings are either natural or artificial flavorings. From the practical point of view, the principal variation of environment which is definitely under the control of the cultivator, is, of course, the alteration in the composition of the soil, which is brought about by scientific manuring, llie analysis of fruits and vegetables will give the ordinary agriculturist much information as to the necessary mineral ingredients to be added to the soil but in the case of essential oils, the conditions are entirely different. Dietary intake is of great importance. Linoleic acid (C18 2o)6) and a-linolenic acid (C18 3o)3) are the parent essential fatty acids for humans. Both fatty acids derive from vegetable oils. Higher fatty acids are then produced by chain elongation and desaturation.
