Effect of dietary fiber

The beneficial effects of dietary fiber, including both soluble and iasoluble fiber, are generally recognized. Current recommendations are for daily iatakes of 20—35 g ia a balanced diet of cereal products, fmits, vegetables, and legumes. However, the specific preventive role of dietary fiber ia certaia diseases has beea difficult to estabUsh, ia part because dietary risk factors such as high saturated fat and high proteia levels are reduced as fiber levels iacrease. [Pg.70]

Wheat bran has been the fiber source most commonly used to study effects of dietary fiber on calcium absorption in controlled laboratory studies. However, wheat bran and other forms of fiber as they occur in food products present several disadvantages in terms of definition and by concurrently altering intakes of other substances or materials known or suspected of having an adverse effect on the bioavailability of calcium such as phytates and oxalates (5,13,17,22-28). Several studies have been conducted which have sought to separate or compare the effects of phytate and fiber... [Pg.175]

The effects of dietary fiber on chemically-induced colon cancer in rats are variable being dependent on the carcinogen used and its mode of administration as well as the sex and strain of the rat. In most cases, however, dietary fiber has been found to inhibit carcinogenesis. [Pg.58]

The behavior of minerals is often influenced by the presence of other food constituents. The recent interest in the beneficial effect of dietary fiber has led to studies of the role fiber plays in the absorption of minerals. It has been shown (Toma and Curtis 1986) that mineral absorption is decreased by fiber. A study of the behavior of iron, zinc, and calcium showed that interactions occur with phytate, which is present in fiber. Phytates can form insoluble complexes with iron and zinc and may interfere with the... [Pg.124]

Food and drugs have traditionally been considered separate categories in the legislative process. Until relatively recently, health claims on foods were prohibited in many countries. However, in recent years consumers have been deluged with health information relating to their foods. Some of this information has been negative, such as information about the effect of fat on the incidence of heart disease other information has been positive as for instance the beneficial effect of dietary fiber. [Pg.345]

A series of experiments were initiated to examine the effects of dietary fibers on the plasma uptake of an oral dose of manganese in humans. Stable isotope techniques are the ideal methods for measuring the intestinal absorption of minerals however this technique is impossible for manganese because of its monoisotopic nature (14). Also, ethical considerations prohibit the use of radioactive forms of manganese. Thus, a technique which was both relatively easy to conduct and safe to administer repeatedly to the same subject was developed. [Pg.113]

Dietary fiber and phytate. Dietary fiber and phytate are known as potential inhibitors of the absorption of divalent cations however, the literature regarding the effect of dietary fiber and phytate on the bioavailability of minerals is contradictory. Data by Yannai and Sachs (1993) indicate that phytate does not affect methylmercury absorption. Yannai and Sachs (1993) compared the absorption by rats of mercury found intrinsically in experimental fish meal with and without added phytate and found no significant differences in the absorption of Hg (93 5%) between 2 experimental fish meal diets (containing 1.4 mol Hg/kg diet), with or without added sodium phytate. The authors speculated that phytate might be preferentially bound to zinc, iron, and copper, which were present at much higher concentrations in the diet. [Pg.189]
