The Cape Wine and Spirit Institute, Stellenbosch, South Africa is thanked for permission to publish the paper in this volume. The California Wine Advisory Board is gratefully thanked for funds supporting the research. C. Kramer, D. Draper, and K. Singleton are thanked for assistance. E. B. In 1938, the Wine Advisory Board was organized under the Department of Agriculture of the State of California. It collected a small tax on each gallon of California wine sold and from these funds supported public relations, advertising, and research for the industry. The research covered a wide field from viticultural and enological research, largely at the University of California, to more than 100 research projects on the possible health values of wine. The Wine Advisory Board was abolished in 1975 and its functions were assumed largely by the Wine Institute. [Pg.26]

The subject of alcoholic beverages is fairly well covered in texts. A comprehensive work is that of Herstein and Jacobs, Chemistry and Technology of Wines and Liquors. A recent book is that of Valaer, Wines of the World. There is the well-known book by Cruess, Principles and Practice of Wine Making. Considerable information is issued by the Wine Advisory Board and the Wine Institute with headquarters in California. Several firms issue journals and information relating to yeast, enzymes, hops, and the like, of interest to the fermentation industries—e.g.. Waller stein Laboratories Communications and Yeast (Anheuser-Busch). This industry is well supplied with trade journals. [Pg.238]

Dr. Blatt also edited Collective Volume 2 of Organic Syntheses (1943), and served for many years on the Board of Directors, where his expertise and knowledge of finance were of inestimable value. At corporation meetings, his versatility was shown by the skill he demonstrated in the selection of the dinner wines. His editorial expertise was used also by Organic Reactions, Inc. where he was a member of the Editorial Board (1948-1954), and then served on the Advisory Board until 1986. [Pg.292]
