Aseptic processing systems have found wide use for packing juices and milk products for the retail market and for the bulk preservation of tomato paste and fmit sHces for use as ingredients. Further information on aseptic processing can be found in the Hterature (2).

Similar results were obtained during hot-break processing of tomato juice and even of tomato paste, the amounts of trans- and cis- lycopene isomers remained almost unchanged, whereas increased levels of ris-P-carotene were found during these processes (Abushita et al. 2000).

Ratatouille is a dish that has grown in popularity over the last few years. It features eggplant, zucchini, tomatoes, peppers, and garlic chopped, mixed, sauteed, and finally, cooked slowly over low heat. As the vegetables cook slowly, they make their own broth, which may be extended with a little tomato paste. The name ratatouille comes from the French word touiller, meaning to stir or mix together. 

It was found that the method is suitable for the extraction of 8.6mg of lycopene (RP-HPLC purity 98.5 per cent) from lOQmg of crude extract of tomato paste containing about 9 per cent of lycopene.
