A high glucose concentration of 150 g l 1 was used in continuous fermentation with immobilised S. cerevisiae the obtained data for sugar consumption and ethanol production with retention time are shown in Figure 8.13. As the retention time gradually increased the glucose concentration chopped, while the ethanol concentration profile showed an increase. The maximum ethanol concentration of 47 g l 1 was obtained with a retention time of 7 hours. The yield of ethanol production was approximately 38% compared with batch data, where only an 8% improvement was achieved.

The Health Professionals Follow-up Study showed a negative association of prostate cancer risk with high fructose intake. Additional data on the role of sugar consumption on prostate cancer risk is lacking. Some evidence suggests that increased fiber intakes are related to decreased prostate cancer risk. 

Consumption of sweet chocolate in the U.S. is low. The majority of chocolate consumed is milk chocolate produced from chocolate liquor, sugar, cocoa butter, and milk solids. Because most milk chocolate produced in the U.S. contains 10 to 12% chocolate liquor, differences in methylxanthine content among commercial milk chocolate are due more to the varieties and blends of cocoa bean (Table 9). Based on analytical data from seven brands of commercial milk chocolate, a typical 40-g milk chocolate bar contains approximately 65 mg theobromine and less than 10 mg caffeine.28 Milk chocolate bars containing other ingredients, such as peanuts, almonds, and confectionery fillings, obviously contain less methylxanthines. In a survey of 49 marketed chocolate and confectionery products, theobromine concentrations ranged from 0.001 to 2.598% and caffeine content from 0.001 to 0.247%.33... 

The data obtained from studying crude cultures were not as bad as one would assume. For example, the stoichiometric relationships between the consumption of sugar and the production of alcohol and carbon dioxide were determined even before yeast became known as the causative agent of alcoholic fermentation (Gay Lussac 1810). Furthermore, the general equation for the formation of propionic acid was calculated by A. Fitz in Strassburg in 1878 on the basis of studies with crude cultures inoculated with cow excrements ... 

Analytical data, such as the consumption of the oxidant or production of formic acid, have been reported for a number of compounds without isolation of the products. In these cases the substances oxidized ate listed but the products are omitted, although their identity in many instances is apparent from the analytical data. The yields recorded for the products of the oxidation of some of the glycosidic derivatives of the sugars are based on analytical and rotatory data. In such cases the products were isolated in unspecified amounts as intermediates in the preparation with high yields of the corresponding crystalline strontium or barium salts. 

Therefore, the data reported in these past few years, compared with those reported by Tachis (1988), show that, contrary to the past, when the dry style predominated, the slightly sweet style, with a residual sugar between 50 and 100 g L 1, is prefered. Indeed, these data reflect the current opinions of experts for future trends in consumption their estimates are toward the slightly sweet and sweet styles (amabile and dolce) of Vin Santo.

The results of the national GHG emission inventory (with 2001 as the last year available) and statistical data for the domestic energy system created the base for calculating CO2 emission from ETS installations. The estimation was based not only on the results of the emission inventory, but also on energy statistics. In case of autoproducers of electricity or heat, their fuel consumption is classified according to the final consumption of a given industrial sector. Emissions were calculated as a sum of emissions from sectors covered by the ETS (e.g. cement) and emission from autoproducers (heating and CHP plants) in sectors not covered directly by Annex I of the Directive (e.g. sugar and chemical industry).
