Cheeses made from milks with high fat contents tend to have higher moisture levels in relation to protein content. This ratio, also called moisture in the nonfat substance (MNFS), is an important compositional factor influencing the quality of cheese (Pearce and Gilles 1979). It is the relative wetness of the casein in the cheese, rather than the percentage of moisture in the cheese as a whole, that influences the course of the ripening process (Lawrence and Gilles 1980). [Pg.637]

Take the organic substance called acetamide, for instance, a compound related to proteins. We can write two valid electron-dot structures for acetamide, both of which fulfill the octet rule for the C, N, and O atoms. One of the two structures has no formal charges, while the other has formal charges on the O and N atoms. (Check for yourself that the formal charges are correct.)... [Pg.262]

The energy value of consumed food depends on the content of nutrients and on such factors as their digestibility, utility, content of some other substances, dietary regime, mental health status and other factors. Energy value is mainly related to proteins, fats and carbohydrates. [Pg.14]

Calmodulin is a calcium-binding messenger protein of eukaryotic cells that mediates many crucial processes, such as inflammation, metabolism, smooth muscle contraction, intracellular movement, short-term and long-term memory and immune response. Toxic substances related to fasciculols and referred to as HS-A, HS-B (10-234) and HS-C (10-235) are toxins of Hebeloma spoliatum, a species of mushroom of the Hymenogastraceae family. [Pg.846]

Chemiluminescence has been studied extensively (2) for several reasons (/) chemiexcitation relates to fundamental molecular interactions and transformations and its study provides access to basic elements of reaction mechanisms and molecular properties (2) efficient chemiluminescence can provide an emergency or portable light source (J) chemiluminescence provides means to detect and measure trace elements and pollutants for environmental control, or clinically important substances (eg, metaboHtes, specific proteins, cancer markers, hormones, DNA) and (4) classification of the hioluminescent relationship between different organisms defines their biological relationship and pattern of evolution. [Pg.262]

As with urine, saliva (spumm) is easy to collect. The levels of protein and lipids in saliva or spumm are low (compared to blood samples). These matrices are viscous, which is why extraction efficiency of xenobioties amoimts to only 5 to 9%. By acidifying the samples, extraction efficiencies are improved as the samples are clarified, and proteinaceous material and cellular debris are precipitated and removed. Some xenobioties and their metabohtes are expressed in hair. Hair is an ideal matrix for extraction of analytes to nonpolar phases, especially when the parent xenobioties are extensively metabolized and often nondetectable in other tissues (parent molecules of xenobioties are usually less polar than metabolites). Hair is a popular target for forensic purposes and to monitor drug compliance and abuse. Human milk may be an indicator of exposure of a newborn to compounds to which the mother has been previously exposed. The main components of human milk are water (88%), proteins (3%), lipids (3%), and carbohydrates in the form of lactose (6%). At present, increasing attention is devoted to the determination of xenobioties in breath. This matrix, however, contains only volatile substances, whose analysis is not related to PLC applications. [Pg.195]
