The natural gas sources are spread unevenly over the world with almost 70% of the natural gas reserves located in the Middle East, Russia and the Caucasus region as shown on Figure 4. Provided the consumption of primary energy sources is maintained at present level the depletion time is reportedly 60.7 years for natural gas according to BP [3] (40.6 years for oil, and 204 years for coal)1. Although these estimates do not reflect the real source, they confirm that the fossil resources are rather limited and may be depleted within a few generations. 

Some special problems arise at sea. When crude oil is spilled on the ocean, a slick is formed which spreads out from the source with a rate that depends on the oil viscosity. With sufficient energy an O/W emulsion may be formed, which helps disperse oil into the water column and away from sensitive shorelines. Otherwise, the oil may pick up water to form a water-in-oil emulsion, or mousse ( chocolate mousse ). These mousse emulsions can have high water contents and have very high viscosities, with weathering they can become semi-solid and considerably more difficult to handle, very much like the rag-layer emulsions referred to above. The presence of mechanically strong films makes it hard to get demulsifiers into these emulsions, so they are hard to break. See Chapter 9. 

Marine oil spills can cause significant environmental damage. When a crude oil is spilled at sea several processes can occur (Figure 9.5) [552]. Immediately following a spill, a slick is formed which spreads out from the source [553,554]. Studies of the spreading of the spilled oil have been carried out by a number of researchers [553,555-561], Next there is the potential for the formation of two quite different kinds of emulsions. 

Identified as the specific causes of the ignition were sparks from percussion or friction from floating roofs or other objects (3 cases), ignition of leaked oil by an open flame (2), ignition of leaked oil from an automobile engine (1), and a flame spread from another source (1). 

The physical state of fats and oils and their crystal structures are important for application of such products. In addition, formulation of products for special applications such as bakery, confectionary, frying, salad dressing, margarines, and spreads requires special characteristics that make the products suitable for such purposes. Thus, each source material will be important for its physical and chemical characteristics and hence suitability as a food component.
