To ensure the safety of food products, representative samples must be inspected so that foodborne bacteria can be identified.15,18,19 Bacteria producing heat-stable enterotoxins, such as Staphylococcus aureus, may be identified by biochemical and serological techniques.20,21 Molecular methods are now widely used for the identification of many pathogenic foodborne bacteria,15,22,23 In addition bacteria used as starter cultures for cheese, yogurt, other fermented foods and beverages, and probiotic dietary supplements may be identified for quality assurance.22,24,25...

Use of this procedure (1) eliminates the need for carrying starters in a factory and thus reduces the hazards of culture failure through infection by bacteriophage or for other reasons (2) enables the manufacturer of cultures to exert suitable control of quality so that the user is assured of a pure and active culture (3) avoids repeated transfer of the culture, thereby minimizing problems of strain dominance, and allows the user to mix pure cultures in the exact proportions desired and (4) enables the user to store cultures which are almost instantly active.

Quality assurance departments that demonstrate a history of effectiveness within the corporate culture and foster loyalty among their peers are usually known for fairness, constructive approach, cooperative attitude and informative style. 

IT departments have traditionally not been directly worked in compliant environments and hence there is a lack of understanding in current good practices. Expectations from user and quality assurance groups will not be achieved unless there is a training program and culture change within the IT department. 

Many other tests could have been included to demonstrate the value of in vitro tests in quality control. Some, such as multistage impingers for aerosols, can be predictive of in vivo behaviour, or at least give an assurance of consistency of effect. An interesting test system for evaluating inhaled nasal delivery systems (Fig. 12.18) combines a physical device with cultured cells so that the interaction of microparticles with living cells can be studied directly. As new delivery systems appear, new tests will be required - as will ingenuity. 

Quality assurance by means of strict quality control of all aspects of a cell culture process has always been of prime importance, given the sensitivity of cells to sub-optimal medium and environmental factors and the ease with which cells can become contaminated with viruses and other microorganisms. The potential for biological changes in scale-up of cell culture processes demands even greater standardization and testing of the system.
