Prepackaged foods

The sterilizers or retorts used to process canned or prepackaged foods must be designed in such a way as to assure uniform temperature distribution throughout. Adequate venting permits complete air removal. The air vent is located at the opposite end from the steam inlet (24). The retorts may be horizontal or vertical in design. 

What is less obvious but of greater potential volume is the growing use of prepackaged foods. Here the availability of safety and reliability by proper quality control helps to compensate for the skill of the individual cook, whose culinary expertise and sanitation are often impossible to control in a modern, large institution. In practice, this means that the terms of the agreement must be understood and agreed by everyone involved and that compliance with the agreed terms must be monitored in a way that ensures credibility. It must be kept in mind that a supply-chain-wide CCP-based quality control system can be more or less complex, and that it is imperative for success that the effort spent on control is proportional to the purpose of the system. The credibility in short, often personalised, chains will have a different foundation from that required in complex chains producing labelled, prepackaged foods (Kjaemes etal., 2006). 

Regarding packaging materials for irradiated foods, most commonly used food packaging material are suitable for the purpose. However, irradiation of prepackaged food requires approval of its packaging material [132].

There is much information available on sampling plans for foodstuffs. The Codex Alimentarius Commission (document CAC/RM 42-1969) deals with sampling plans for prepackaged foods, and there are standards available from the International Standards Organization (ISO) for sampling of various foodstuffs including fresh fruits and vegetables (ISO 874 1980). Details of the mathematical principles involved are dealt with in many books on statistics.
