Post-bleaching

A separate bleaching operation for oils that have been hydrogenated, fractionated or interesterified has three purposes. It removes all traces of any catalyst used in the preceding process, any undesirable colors generated by the preceding process, and any peroxide and secondary oxidation products. The odoriferous substances in oils are free fatty acids, peroxides, aldehydes, alcohols and other organic compounds. Experience has shown that the flavor and odor removal correlates well with the reduction of free fatty acids. Therefore, all commercial deodorization consists of steam stripping the oil for free fatty acid removal. Currently, batch, semi-continuous, and continuous systems of various designs are utilized to produce deodorized oils. All of the systems utilize steam stripping with four interrelated operation variables vacuum, temperature, stripping steam rate, and holding time. [Pg.223]

During high temperature deodorization polyunsaturated acid can be converted to trans isomers. Since this is more likely with linolenic acid than with linoleic acid, it is not a major problem with cottonseed oil. [Pg.223]

Clarity at or below ambient room temperature is the primary characteristic of a liquid oil. Natural vegetable oils that are liquid at room temperatures in temperate climates, 75 5°F (23.4 3°C), contain high levels of unsaturated fatty acids with low melting points. Fatty acids with one or more double bonds and 18 carbon atoms are the most important unsaturated fatty acids for liquid oils. Oleic (18 1), a monounsaturated fatty acid, is the most widely distributed and most stable Ci8 unsaturated fatty acid. Linoleic (18 2) and linolenic (18 3) are the most widely distributed di- and triunsaturated fatty acids. Both of these polyunsaturated fatty acids are termed essential because they cannot be synthesized by animals, including man, and must be supplied in the diet. Complete exclusion of the essential fatty acids from the diet results in scaly skin, loss of weight, kidney lesions and eventually death. [Pg.224]

In some cases, photobleaching the acceptor can yield a photoproduct with distinct absorption and emission properties, which can contribute to the post-bleach donor signal, resulting in the overestimation of FRET efficiency (10). A second class of herbicides primarily affects ( -carotene desaturase. These herbicides are apparent feedback inhibitors of PD as well. This class of compounds includes dihydropyrones like LS 80707 [90936-96-2] (56) and 6-methylpyridines (57,58). The third class consists of the ben2oylcyclohexane-diones, eg, 2-(4-chloro-2-nitroben2oyl)-5,5-dimethyl-cyclohexane-I,3-dione. This class of atypical bleaching herbicides induces phytoene accumulation when appHed either pre- or post-emergence. However, it does not inhibit phytoene desaturase activity in vitro (59). Amitrole also has been considered a bleaching herbicide, though its main mode of action is inhibition of amino acid synthesis. [Pg.43]
