Odor data for the various amyl alcohols is limited. The lowest perceptible limit for 1-pentanol and / fZ-amyl alcohol are 10 and 0.04 ppm, respectively (135). tert-Axa[. alcohol has a threshold value of 2.3 ppm (and a 100% recognition level of 0.23 ppm) 3-methyl-1-butanol has an odor threshold of 7.0 ppm. The very broad nature of flavor perception cannot be addressed in a single chapter and thus the book edited by Taylor and Roberts [3] is recommended for a better appreciation of the overall phenomenon of flavor perception. Limitations in terms of space (and of the author) result in this text focusing discussion on the traditional aspects of flavor, i.e., olfaction, taste, and the somatosenses. These fundamental sensory inputs will be discussed in terms of their functioning in the human to help the reader gain an appreciation of the complexity of flavor perception. [Pg.4]

Olfactory receptors have been a subject of great interest (9). Much that has been postulated was done by analogy to the sense of sight in which there are a limited number of receptor types and, as a consequence, only three primary colors. Thus attempts have been made to recognize primary odors that can combine to produce all of the odors that can be perceived. Evidence for this includes rough correlations of odors with chemical stmctural types and the existence in some individuals having specific anosmias. Cross-adaptation studies, in which exposure to one odorant temporarily reduces the perception of a chemically related one, also fit into this hypothetical framework. Implicit in this theory is the idea that there is a small number of well-defined odor receptors, so that eventually the shape and charge distribution of a specific receptor can be learned and the kinds of molecular stmctures for a specified odor can be deduced. [Pg.85]

Patients seen for flashbacks are treated with oral diazepam (15—30 mg/day for adults) if symptoms of anxiety are severe (Rumack 1987).
