Whey may be substituted for starch by as much as 25% in extruded corn snacks, but the product does not puff as much as com alone, as the water-holding whey protein does not react with the starch matrix (Onwulata et al., 1998). WPCs or isolates can be added along with starch to create expanded snack foods with boosted nutritional content however, without texturization, whey proteins in amounts larger than 15% may interfere with expansion, making the products less crunchy. To counter this effect, whey proteins can be texturized with starch to improve their interaction with other food components in a formulation, principally to increase extmdate expansion. In one successful application, between 25% and 35% of the flour was replaced with whey protein (Onwulata et al., 2001a,b). [Pg.192]

In Denmark, Hogh-Jensen (2000) studied the effect of white clover on the nutritional content of the companion perennial ryegrass and found that white clover increased the K and P content in the ryegrass. [Pg.29]

Preserving the microbiological safety of processed produce should not have to conflict with nutritional quality. Although some sanitizing compounds are generally perceived as harsh chemicals that oxidize and destroy nutriments, it is important to consider the effect of those treatments and new alternatives on the nutritional quality of produce (Ruiz-Cruz and others 2007). Therefore, minimal processing with low or no food safety risk with optimal nutritional content will lead to increased consumption and meeting of consumer demands. In this context the effect of fruit sanitation on the phytochemical content and bioactivity must be contemplated. [Pg.320]

Another option to overcome the nutritional losses is to use the preserving treatment in fresh-cut fruits to increase the nutritional content by the use of edible coatings and vacuum impregnation. [Pg.331]

Analytical chemistry impacts on every aspect of modern life. The food and drink we consume is tested for chemical residues and appropriate nutritional content by analytical chemists. Our health is monitored by chemical tests (e.g. cholesterol, glucose), and international trade is underpinned by measurements of what is being traded (e.g. minerals, petroleum). Courts rely more and more on forensic evidence provided by chemistry (e.g. DNA, gun-shot residues), and the war on terrorism has caused new research into detection of explosives and their components. Every chemical measurement must deliver a result that is sufficiently accurate to allow the user to make appropriate decisions it must be fit for purpose. [Pg.314]

Genetically engineered food crops have been developed to resist pests and disease and to tolerate chemical herbicides exhibit improved fond processing iraits exhibit improved nutritional content resist adverse soil and weather conditions and to exhibit improved fruit rijiening or softening, texture, or flavor. [Pg.709]

Soft drinks and fruit juices are usually consumed to quench thirst or as a sociable activity, rather than for their nutritional content. However, they always provide dietary water and, depending on formulation, can also contribute significant... [Pg.339]

Stinging nettle (leaves) - Body tonic, rich nutritional content of vitamins and minerals, helps in recovery and preventing exhaustion. [Pg.551]

Vanilla contains 25% of sugars, 15% fat, 15-30% cellulose and 6% minerals (Uhl, 2000). Water content is unusually high (35%). The nutritional content of vanilla extract in 34.4% ethanol is given in Table 15.2 (USDA National Nutrient Database for Standard Reference, 2002). [Pg.290]

In addition to those mentioned in Table II, there is a group of enzymes in foods which lower the nutritive content. This group includes thiaminase which acts on thiamine in flesh food, ascorbic acid oxidase in... [Pg.5]

Two children developed neurological complications of fat emulsion therapy, including focal and generalized seizures, weakness, and altered mental status, before any systemic findings were in evidence (15). Biopsy and autopsy findings included cerebral endothehal and intravascular lipid deposition. These complications are potentially reversible with alteration of the parenteral nutrition content, highlighting the importance of their early recognition. [Pg.2701]
