Molasses composition

Composition. Molasses composition depends on several factors, eg, locality, variety, sod, climate, and processing. Cane molasses is generally at pH 5.5—6.5 and contains 30—40 wt % sucrose and 15—20 wt % reducing sugars. Beet molasses is ca 7.5—8.6 pH, and contains ca 50—60 wt % sucrose, a trace of reducing sugars, and 0.5—2.0 wt % raffinose. Cane molasses contains less ash, less nitrogenous material, but considerably more vitamins than beet molasses. Composition of selected molasses products is Hsted in Table 7. Procedures for molasses analysis are avadable (59).

Various sources of carbohydrate are used in the fermentation processes. Molasses and com steep are the most common carbon sources used to generate energy for biosynthesis. Having the correct composition and desired concentration is a necessary task in actual experimental work.

Indian workers have advocated the use of molasses in a polymerized form in road-making, either by direct application to a macadamized road surface or by the preparation of a molasses-bitumen composition with which granite chips may be surfaced prior to their use as road material. The vinasse of sugar beet.—Sugar beet contains about 0 5 per cent, of potash, K20, largely in combination with organic acids. The potash accumulates in the molasses of the best sugar factories. The molasses are fermented and distilled for alcohol. The residue which remains in the retort—called vinasse—may be used as a manure, or it may be mixed with lime and ignited to form what was once called vinasse cinder, and used in the manufacture of soft-soap. Food yeast, molasses-grown, is dried to about 5% moisture and has the same chemical composition as bakers yeast. In terms of micrograms per gram of yeast, the vitamin content is 165 thiamine 100 riboflavin 590 niacin 20 pyridoxine 13 folacin 100 pantothenic acid 0.6 biotin 160 para-ainiiiobeuzoie acid 2710 choline and 3000 inositol. YeasL crude protein contains 80% amino acids 12% nucleic acids and 8% ammonia. The latter components lower the true protein content to 40% of the dry cell weight. 

As regards extracts, their composition varies greatly according both to the methods of preparation and purification and to the degree of concentration. With these the possibility of adulteration, especially with glucose, molasses, cellulose extracts and mineral salts, is to be considered. Addition of sulphurous anhydride or sulphites is allowed, for either clarification or preservation of the extract the proportion of total sulphurous acid may reach and even exceed 2%.
