The 6th International Phytochemical Conference, PJrytochemicals Aging and Health, focused on the particular concerns of nutrition in the aging population, as well as new aspects of research methodology, real-world applications, and updates or expansions of previously introduced topics.

The editors and authors wish to thank The Nutrilite Health Institute, Access Business Group, for its support of the 2006 6th International Phytochemical Conference, Phytochemicals Aging and Health, held in partnership with the Department of Human Nutrition and Food Science, College of Agriculture, at the California State Polytechnic University, Pomona, October 16 and 17,2006. The research presented at that conference contributed to the publication of this volume.

The emphasis and direction of phytochemieal research has shifted in the years since this series of international phytochemieal conferences was initiated in 19%. Interest in phytochemicals has grown exponentially during the past few years as evidenced by the creation of research centers, the proliferation of newslettCTS, journals and books, and the many conferences and symposia that are now held on an annual basis. In order to maintain the relevance and value of the biannual conferences held at California State Polytechnic Uiuversity Pomona, the organizers took a more focused approach to designing and planning the most recent conference. The previous conferences were quite eclectic. There was an identified theme but there were typically a number of diverse topics covered in order to keep abreast of all the important trends in phytochemieal research. 

The present volume is based on the proceedings of the international conference entitled Biodiversity A Source of New Leads for the Pharmaceutical and Agrochemical Industries held at the University of St. Andrews in.September 1999. This was organised by the Biotechnology Group of the Industrial Division of The Royal Society of Chemistry, as was the preceding meeting on Phytochemical Diversity held at the University of Sussex in 1996. Whereas the primary topic of the earlier conference was industrially useful plant products, the current volume is of wider scope and includes substances derived from microbial, marine and plant sources. 

Parts of this paper have been presented at the Joint Shizuoka Symposium on Tea and Health Science, Shizuoka, Japan, February i4-15, 2003, and at the 4th International Conference on Phytochemicals, Panoma, CA, October 20-21,2002. This study was supported by the National Science Council NSC 91-23-20-B-002-068 and NSC91-2311-B-002-037, and by the National Health Research Institute NHRI-EX91-8913BL. 

Dr. Alasalvar is the author of some 50 refereed research papers and book chapters, and editor of three books. He has given over 60 presentations at different scientific conferences. He has dehvered invited lecturers, served as a session chairperson and poster-award chair for various international congresses, and organized international symposia. His research interests include different areas of nutraceuticals and functional foods as well as marine foods, tree nuts (particularly hazelnut), natural antioxidants, dietary phytochemicals, food bioactives as well as sensory, flavor, and hpid chanistry.
