The processed pouches were subjected to sterility test as per (Indian Standard Institute 2168, Specification for Pomfret canned in oil. New Delhi, India). Commercial sterility is ensured so that there is no growth of microorganisms after thermal processing. Four pouches were incubated at 55°C for 4 days and another four were incubated at 37°C for 14 days before conducting the tests. The incubated pouches were aseeptieally opened and 1-2 g of the samples were taken with a sterilized forceps and inoeulated into the sterilized fluid thioglycolate broth in test tubes. In order to ereate anaerobie condition, a little sterilized liquid paraffin wax was put on the top of the broth and kept for incubation.
