As a result of the en2ymatic degradation of proteins, key indexes change, ie, protein solubiUty indexes (PSI), peptide chain length (PCL), and protein solubihty in 0.8 Af TCA (TCA-index) (Fig. 14). The pH differential method was described as a fast and convenient assay for the quantitation of monomeric anthocyanins by Giusti (2001). It was approved by the Association of OfQcial Analytical Chemists (AOAC) in 2005 as a standard method to evaluate total monomeric anthocyanin pigment content in fruit juices, beverages, natural colorants, and wines. The formation of the major UV degradation peak at about 287 nm in the weathered PC appears to correlate well with the formation of the yellow color in the weathered sample.
