Although a systematic method exists for naming oxoacids, many such laboratory reagents are well recognized by their common names (e.g. sulfuric acid, nitric acid, nitrous acid). A problem with many common names is that they often hide structural information and, most importantly, do not indicate the number of ionizable hydrogen atoms. Where large families of acids exist, e.g. the sulfur oxoacids, systematic names are usually more helpful than traditional ones. [Pg.168]

Leather is the material made from animal skin by the process of tanning, which entails chemically altering the composition of the skin so as to make it durable and resistant to decay. Leather is therefore not a protein but a protein derivative. Although the tanning process alters the composition of skin, leather retains the fibrous structure and utilitarian functionality that make skin suitable for multifarious applications. Molecules with sharply demarcated regions of hydrophilic and hydrophobic character are known as amphipathic molecules. Soaps provide an example. These form a variety of interesting structures. Such molecules may be thought of as schizophrenic, simultaneously struggling to satisfy two opposing natures. In water, amphipathic molecules will act so as to expose their hydrophilic structures to the aqueous environment while trying to find ways to hide their hydrophobic structures from it.
