Flavor manufacturing

In 2006 and 2007, NIOSH investigated two flavor-manufacturing plants. Medical testing of 29 production workers identified 7 workers with fixed airways obsfrucfion who had worked in plated-powder and/or liquid flavoring work areas 4 of these workers had severe fixed airways obsfrucfion (CDC, 2007b,c). Mean work area diacetyl air concentrations using NIOSH method 2557) for plated-powder production and liquid production in one of these plants were 0.25 and 0.02 ppm, respectively (CDC, 2007b). [Pg.181]

In 2002, 14 cases of flavoring-related BO among microwave popcorn workers and flavor-manufacturing workers were reported (CDC, 2002 Kreiss et ah, 2002a Lockey et ah, 2002 Parmet and von Essen, 2002). The NIOSH Alert on flavoring-related lung disease was disseminated in 2004 to flavor and food manufacturers and regional OSHA offices (CDC, 2004). [Pg.184]

Possible Wall Materials for Spray-Dried Flavor Manufacture... [Pg.12]

Possibly the most important, and least understood, aspect of spray-dried flavorings manufacture is the role the wall material plays in this process. The polymers utilized for this product are controlled by FDA constraints, cost, finished product labelling considerations and compatability, functionality and historical usage. Given these considerations, polymers selected for the retention and maintenance of labile flavors and aromas in industrial spray dried, food grade systems include both carbohydrate (hydrolyzed starches, "lipophilic starches, plant exudates) and protein. The importance of these wall materials should not be underestimated. [Pg.13]

Chemical Marketing Reporter for June 25, 1979, carried an advertisement of Hydrocal, S.A., Geneva, Switzerland, which announced the availability of "unique new Maillard flavors", manufactured by Frutarom, Ltd., Haifa, Israel. The owner of this operation is Robert Aries, the American chemical engineer who became expatriate in about 1955, and who returned to the United States in 1979. [Pg.313]

The Flavor and Extract Manufacturers Association (FEMA), founded in 1909, represents the interests of its members in the US flavor industry including flavor manufacturers, users, ingredient suppliers, and other interested parties. FEMA maintains a strong scientific program to evaluate the safety of flavor ingredients. [Pg.2902]

CCCs may be companies that specialize in chiral compounds, such as Celgene, Chiroscience, and Oxford Asymmetry, or may have developed into a chiral raw material supplier to an industry other than its original main customer base [e.g., Takasago, a flavor manufacturer, who developed a catalytic route to (-)-menthol, and used related technology to make beta-lactam intermediates]. [Pg.12]

The type of fatty acids present in milk fat can influence the flavor and physical properties of dairy products. There are reports that butter produced from cows fed high-oleic sunflower seeds and regular simflower seeds were equal or superior in flavors to the control butter (Middaugh et al., 1988). The experimental butter was softer, more unsaturated and exhibited acceptable flavor, manufacturing, and storage characteristics. Other workers (CSIRO, 1999 Mason, 2001) have also reported the increase in the unsaturated fatty acids content in milk fat, leading to an improvement in the spreadability of butter even at refrigerated temperatures (Section III.A). [Pg.173]

Extruded soybean and sunflower diets yielded a Cheddar cheese that had higher concentrations of unsaturated fatty acids while maintaining flavor, manufacturing, and storage characteristics similar to that of control cheese (Lightfield et al., 1993). It is also beneficial from a safety point of view as the accumulation of fatty acids, namely C12, C14, C18 l, and C18 2, enhanced the safety of cheeses against Listeria monocytogenes and Salmonella typhimurium (Schaffer et al., 1995). [Pg.173]

Before the formal evaluation begins, it is necessary to specify the data (e.g., botanical, physical, and chemical) required to completely describe the product being evaluated. In order to effectively evaluate an essential oil, attempted complete analyses must be available for the product intended for the marketplace from a number of flavor manufacturers. Additional qnality control data are nseful, as they demonstrate consistency in the chemical composition of the product being marketed. A Technical Information paper drafted for the particular essential oil under consideration organizes and prioritizes these data for efficient sequential evaluation of the essential oil. [Pg.196]

Researchers, using the analytical techniques available, are now able to separate and identify most of the compounds responsible for the aroma of foods [1]. From this vast list of aroma compounds (>7,000), a more limited subset of compounds, i.e., those that have significant flavoring properties, has been selected for manufacture by synthetic means. To be of any value to the flavorist or flavor manufacturer, a... [Pg.299]
