Coalescence is the key to particle size. Any process which gathers the small droplets together to form larger ones c.m he considered forced coalescence. This can Ik- accomplished bv electrostatic fields or by conventional mechanical means such as excelsior packs or collision bailies.

Precipltatora/fllterm. In the past, it was common to direct water to be treated through a bed of excelsior or a similar medium to aid coalescence of oil droplets (Fig. 6). However, the coalescing medium has a tendency to dog, and many of these devices in oil field service have had the medium removed. In such a case, these units act like vertical skimmers since oil droplets must flow counter-current to the downward flow of water through the area formerly occupied by the medium. 

After extraction of the whole paprika, including seed and stems, the obtained colour-value of the extract is relative low, about 350 to 500 ASTA, but the extraction yield can reach 15 to 17 wt.%. High-quality Hungarian paprika species like Sweet Paprika Excelsior give an extract with a colour value between 1,500 and 1,800 ASTA, and a good flavour profile.
