Crushed garlic

Heat a large casserole or deep skillet that can later be covered over medium-high heat for 2 to 3 minutes add the oil and the crushed garlic clove cook, stirring for 1 minute, then remove and discard the garlic. Add the meat chunks to the skillet a few at a time, turning to brown well on all sides. Do not crowd or they will not brown properly cook them in batches if necessary. [Pg.268]

Although Garty hypothesized that the infants delicate skin predisposed them to garlic bums, such reactions have also been reported in older children and adults. For example, a 6-yr-old child developed a necrotic ulcer on her foot after her grandmother applied crushed garlic under a bandage as a remedy for a minor sore (Canduela et al., 1995). [Pg.173]

Garlic is also a medicinal used by the Kallawaya herbalists, and it is mentioned that crushed garlic contains the powerful bactericidal agent allyl allylthiosulfinate (allicin), which is formed by the interaction of the enzyme allinase with the substrate 5-ethyl L-cystein sulfoxide (Bastien, 1987, p. 102, n. 6). Bastien in turn supplies the results of an experiment on mice. Thus, in miee infected with sarcoma, injection either of the enzyme allinase or the substrate 5-ethyl L-cystein sulfoxide (alliin) alone had no effect, all animals dying within 16 days. However, in infected mice treated with both the enzyme and the substrate, the animals were still alive after 6 months. Allicin is therefore the active anticancer ingredient, as will be emphasized especially in Chapter 5. [Pg.140]

The transformation products of allicin and odier thiosulfinates present in crushed garlic is greatly accelerated and expanded upon heating such as during steam distillation or cooking. As many as 20 different sulfides have been identified in the steam distillate and include diallyl mono to hexasulfides, allyl methyl mono to hexasulfides dimethyl mono to hexasulfides, and allyl 1-propenyl di and trisulfides [38]. [Pg.463]

Ajoene was discovered as the most potent platelet inhibitor from an oil-macerated crushed garlic (Apitz-Castro et al 1983), and they revealed that ajoene inhibited both of the arachidonate metabolism and the membrane G-protein level signal transduction of platelets (Apitz-Castro eta/. 1986a, 1986b, 1988). [Pg.444]
