CLARIFYING AGENT

In some beverages, such as fruit juices, beer or wine, turbidity and sediment formation can occur with the involvement of phenolic compounds, pectins and proteins. These defects can be corrected by (a) partial enzymatic degradation of pectins and proteins (b) removal of phenolic compounds with the aid of gelatin, polyamide or polyvinyl pyrrolidone powders and (c) by protein removal with bentonite or tannin. Bentonite consists of hydrous aluminium silicate.

The class of clarifying agents overlaps to a wide extent to nucleating agents. In Table 12.2 a few clarifying agents are summarized.

Performance criteria of clarifying agents are clarity, organoleptics, processability and nucleation. A typical third generation clarifying agent is the sorbitol acetal Millad 3988 (3,4-dimethyl dibenzylidene sorbitol). 

The coupling component is dissolved in an alkaline solution and, after adding a clarifying agent and possibly charcoal to the solution, it is filtered through a sparkler filter or a filter press.

Gel. A jelly-like substance formed as solutes (materials in solution) from submicroscopic crystalline particle groups that capture much or all of the solvent in their interstices or structure. Usually, the solutes are a small proportion, maybe 1-2% of the gel. Gels can be used for filters and clarifying agents, textile and paper adhesives, polymerization precursors, and of course, as a component in gelatin the Italian ice cream. 

Processing Aids. Manufacturing aids used to improve the appearance or performance of food products include clarifying agents (floccuianls), clouding agents, catalysts, and tiller aids. 

Ash. In ordinary wines the weights Of ash and extract are approximately in the ratio x xo. A greater proportion Of ash may be due to some treatment of the -wine, such as plastering, addition of alkaline salts to correct acidity, salt, phosphate, alum, or impure mineral substances (kaolin, Spanish clay) used as clarifying agents.
