Calcium lactate

Calcium lactate (CH3-CH(OH)-COO)2Ca 5H2O) is produced as an intermediate in the production of lactic acid by the reaction of slaked lime with raw lactic acid. It acts as a protein plasticiser (coagulant) and is used as an egg extender and foaming agent. It is also used in pharmaceuticals as a source of calcium [31.17], and as a buffer and source of calcium in bread. Its production requires food-grade slaked lime (e.g., [31.30] and Table 31.2). [Pg.361]


If ingestion occurs, dilute solutions of calcium compounds (calcium lactate, calcium gluconate, etc) or a large amount of milk followed by magnesium sulfate should be adrninistered (63,64). [Pg.462]

Because swelling and consequent bulk erosion induced by the water-soluble salt is not desirable, use of the low-water-solubility, sUghtly acidic salt calcium lactate was investigated (30). Tuba et al. (24) reported that rats fed 15.4% dried rhubarb or an equivalent amount of sodium oxalate grew at a slower rate and had higher serum alkaline phosphatase levels than rats fed control diets containing calcium lactate.
