Browning amino acid, composition

In spite of this heterogeneity, a number of investigators have studied the amino acid composition and the primary sequence of serum albumin (King and Spencer 1970, 1972 Brown et al. 1971 Spencer 1974 Brown 1975, 1977 Peters and Feldhoff 1975 Reed et al. 1980). The total primary amino acid sequence is illustrated in Figure 3.7 and consists of 582 residues with a calculated molecular weight of 66,267... 

The crystal structure of the N-terminal 80 residues of tropomyosin (Brown et al., 2001) contains its first alanine cluster and displays two specific consequences of this motif for the main-chain geometry of the coiled-coil. One is that the coiled-coil in this segment becomes locally narrow, to 8.0 A diameter, as would be expected from alanine s small size. This feature is directly related to the stability of the coiled-coil in a 10 A wide dimeric coiled-coil, a pair of core alanines from the opposite helices would generally leave unfilled spaces in the interior these spaces become smaller as the main chains of the helices approach each other and the core becomes more close-packed. Nitzschia closterium, Cylindrotheca fusiformis, and S. castatum (18-20%). However, the protein content (50.10%) of this species was very high compared with that of N. closterium and C. fusiformis (16-38%) (Brown and Jeffreyi, 1995 Kang et ah, 2011). Some microalgae with high protein content are used very commonly as can be seen in Table 25.1. Many microalgae species have similar amino acid compositions and were rich in the essential amino acids (Brown, 1991).

The amino acid composition of the protein fraction is very similar between different microalgae and relatively unaffected by light and nutrient conditions (Brown et al, 1997 Daume et al., 2003). On this basis, it is unlikely that protein quality is a major factor contributing to differences in the nutritional value of microalgae.
