Bitterness control

In the extraction of citms juices it is desirable to have as gende an extraction pressure as possible. There should be minimal contact time between juice and pulp to reduce the amount of bitter substances expressed from the peel into the juice. The amount of suspended soHds in citms juice is controlled in a subsequent separation in a finisher. A screw action is used to force the juice through a perforated screen and separate the larger pulp particles from the juice. The oil level in the juice is adjusted by vaporizing under a vacuum (10). The separated pulp is washed and finished several times to produce a solution which is then either added back to the juice to increase juice yield, or concentrated to produce pulp wash soHds, also called water extract of orange soHds, which can be used as a cloudy beverage base. [Pg.571]

In the same period, vendors of proprietary medicines took advantage of our love of the natural to peddle a variety of plant-derived products. These were advertised as safer and more pleasant than those typically employed by physicians. Another group of compounds, the tetracyclines, are made by fermentation procedures or by chemical modifications of the natural product. The hydrochloride salts are used most commonly for oral administration and are usually encapsulated because of their bitter taste. Controlled catalytic hydrogenolysis of chlortetracycline, a natural product, selectively removes the 7-chloro atom and produces tetracycline. Doxycycline and minocycline are other important antibacterials. Tetracycline can be prescribed for people allergic to penicillin. Doxycycline prevents traveler s diarrhea. Tetracyclines help many infections including Rocky Mountain spotted fever, Lyme disease, urinary tract infections, bronchitis, amoebic dysentery, and acne. [Pg.442]

Standards and Controls. In all experiments, the 85 g standard patties were made from freshly ground top round steaks (excess fat trimmed) and immediately frozen in covered glass petri plates until the day of the assay. The fat content was routinely from 4-5%, determined by the method of Koniecko (57). The standards generally had relatively low values for hexanal, total volatiles (TV) and TEARS, and low intensity values for painty (PTY), cardboardy (CED), sour (SUR) and bitter (ETR). These results indicated the absence of lipid oxidation and no formation of off-flavors. Pao Jiang is bitter and warm, enters the Spleen and Liver meridians and also enters the blood level. Like Ai Ye, it can warm the interior, stop bleeding and alleviate pain, but its function focuses on the Middle-Jiao. It is especially effective for treating bleeding due to Spleen-Yang and Qi deficiency failing to control the blood. Such bleeding may be located in the stomach, intestines and uterus. [Pg.289]
