Water adsorbate interactions

The dielectric properties of most foods, at least near 2450 MH2, parallel those of water, the principal lossy constituent of food (Fig. 1). The dielectric properties of free water are well known (30), and presumably serve as the basis for absorption in most foods as the dipole of the water molecule interacts with the microwave electric field. By comparison, ice and water of crystaUi2ation absorb very Httie microwave energy. Adsorbed water, however, can retain its Hquid character below 0°C and absorb microwaves (126). [Pg.344]

The dipole density profile p (z) indicates ordered dipoles in the adsorbate layer. The orientation is largely due to the anisotropy of the water-metal interaction potential, which favors configurations in which the oxygen atom is closer to the surface. Most quantum chemical calculations of water near metal surfaces to date predict a significant preference of oxygen-down configurations over hydrogen-down ones at zero electric field (e.g., [48,124,141-145]). The dipole orientation in the second layer is only weakly anisotropic (see also Fig. 7). [Pg.361]

The orientational structure of water near a metal surface has obvious consequences for the electrostatic potential across an interface, since any orientational anisotropy creates an electric field that interacts with the metal electrons. Hydrogen bonds are formed mainly within the adsorbate layer but also between the adsorbate and the second layer. Fig. 3 already shows quite clearly that the requirements of hydrogen bond maximization and minimization of interfacial dipoles lead to preferentially planar orientations. On the metal surface, this behavior is modified because of the anisotropy of the water/metal interactions which favors adsorption with the oxygen end towards the metal phase. [Pg.362]

The long tail on the OH stretching band that extends from 3700 to 3400 cm is due to a small amount of residual water adsorbed on the surface. Hydrogen bonding interactions cause the peak to be broad. [Pg.452]

An interaction potential between the surface and ions may also be needed in simulating counterion diffusion for the smectite and mica surface models. The form of such an interaction potential remains to be determined. This may not pose a significant problem, since recent evidence (40) suggests that over 98% of the cations near smectite surfaces lie within the shear plane. For specifically adsorbed cations such as potassium or calcium, the surface-ion interactions can also be neglected if it is assumed that cation diffusion contributes little to the water structure. In simulating the interaction potential between counterions and interfacial water, a water-ion interaction potential similar to those already developed for MD simulations (41-43) could be specified. [Pg.28]

Halloysite-10A represents a structure with few if any interlayer cations, allowing one to investigate the relatively simple case of water interacting with a clay surface. Similarly, ice-like models have been proposed for water adsorbed on smectite and vermie-ulite surfaces (2, 12, 12). These represent cases of charged clay layers with adsorbed exchangeable cations. [Pg.41]

In general, the 2 1 clays are not very simple systems in which to study the interaction of water and surfaces. They have complex and variable compositions and their structures are poorly understood. Water occurs in several different environments zeolitic water in the interlayer regions, water adsorbed on the external surfaces of the crystallites, water coordinating the exchangeable cations, and, often, as pore water filling voids between the crystallites. Thus, there are many variables and the effects of each on the properties of water are difficult to separate. [Pg.43]

In view of the problems associated with the expanding 2 1 clays, the smectites and vermiculites, it seemed desirable to use a different clay mineral system, one in which the interactions of surface adsorbed water are more easily studied. An obvious candidate is the hydrated form of halloysite, but studies of this mineral have shown that halloysites also suffer from an equally intractable set of difficulties (JO.). These are principally the poor crystallinity, the necessity to maintain the clay in liquid water in order to prevent loss of the surface adsorbed (intercalated) water, and the highly variable morphology of the crystallites. It seemed to us preferable to start with a chemically pure, well-crystallized, and well-known clay mineral (kaolinite) and to increase the normally small surface area by inserting water molecules between the layers through chemical treatment. Thus, the water would be in contact with both surfaces of every clay layer in the crystallites resulting in an effective surface area for water adsorption of approximately 1000 tor g. The synthetic kaolinite hydrates that resulted from this work are nearly ideal materials for studies of water adsorbed on silicate surfaces. [Pg.43]

Based on the study of expanding clay minerals, two models of water adsorbed on silicate surfaces have been proposed. One states that only a few layers (<5) of water are perturbed by the silicate surface, the other concludes that many layers (perhaps 10 times that number) are involved. The complexity of the interactions which occur between water molecules, surface adsorbed ions, and the atoms of the silicate mineral make it very difficult to unequivocally determine which is the correct view. Both models agree that the first few water layers are most perturbed, yet neither has presented a clear picture of the structure of the adsorbed water, nor is much known about the bonding of the water molecules to the silicate surface and to each other. [Pg.51]

These examples show that adsorption of water molecules on platinum electrodes depends on the solution components. If the energy of the solute adsorption is higher than that of water molecules, water tends to adsorb on the top of the primary solute layer, which is directly bound to the platinum adsorption sites. The foundation of equilibrium-selective adsorption is based on differences in the equilibrium selectivity of the various adsorbates with the adsorbent While all the adsorbates have access to the adsorbent sites, the specific adsorbate is selectively adsorbed based on differences in the adsorbate-adsorbent interaction. This in turn results in higher adsorbent selectivity for one component than the others. One important parameter that affects the equilibrium-selective adsorption mechanism is the interaction between the acidic sites of the zeolite and basic sites of the adsorbate. Hence, water molecules enhance the acidic properties of the zeolite s Bronsted acids. Adsorbate-adsorbent interactions and, therefore, adsorbent selectivity and adsorbate mass transfer rates are altered due to water polarization. When developing an adsorbent to be used in a commercial adsorptive separation process, the water content of the adsorbent is adjusted to balance adsorbent selectivity and component mass transfer rate. [Pg.219]

Other methods of surface area determination depend, in general, on adsorption under well defined conditions of various solute molecules of known dimensions (Sposito, 1984 Davis and Kent, 1990). Some of these are dipole molecules so that dipole interactions with the surface or H-bonding are involved. Water adsorbed at a fixed relative water vapour pressure (e. g. 0.2) to provide a monolayer is one example (Torrent et ah, 1990). An organic dipole frequently used for soils is ethylene glycol monoethylether (EGME) (Carter et al., 1965). The main problem with these dipole molecules lies in their mutual association which may lead to localized adsorption beyond a monolayer (capillary condensation), particularly on porous material. [Pg.96]
