The discovery that, in industrialised societies, diets deficient in fruits and vegetables can effectively double the risk of developing many different types of cancer has focused renewed attention on the beneficial properties of these foods (Block e/a/., 1992 Patterson ef a/., 1990 Southon and Faulks, 2002). As we have seen, plant foods are rich in micronutrients, but they also contain an immense variety of biologically active secondary metabolites providing colour, flavour and natural toxicity to pests and sometimes humans (Johnson et ah, 1994). The chemistry and classification of such substances is still a matter for much research and debate, but this has not prevented attempts to isolate and exploit substances that have variously been termed protective factors , phytoprotectants , phytochemicals and nutraceuticals . Cells cultured in liquid media were separated from the media by filtering them through a stainless steel sieve with a pore size of 1 mm. Cells filtered by the steel sieve were then inoculated into various media. The inoculum consisted of 2g fresh weight of the cells per 200 mL medium in a 500 mL flask. Various media on the mineral base of MS medium were supplemented with growth regulators, vitamins, amino acids, carbohydrates and Umbelliferae vegetable juice. The first clues to the treatment of scurvy occurred in 1535—1536 when Jacques Cartier, on advice from Newfoundland Indians, fed his crew an extract from spmce tree needles to cure an epidemic. Various physicians were recommending the use of citms fmits to cure scurvy in the mid-sixteenth century. Two hundred years later, in 1753, it was proved by Dr. James Lind, in his famous clinical experiment, that scurvy was associated with diet and caused by lack of fresh vegetables. He also demonstrated that oranges and lemons were the most effective cure against this disease. In 1753, inM Treatise on the Scurvy[ Lind pubhshed his results and recommendations (7). Eorty-two years later, in 1795, the British Navy included lemon juice in seamen s diets, resulting in the familiar nickname "limeys" for British seamen. Evidence has shown that even with undefined scorbutic symptoms, vitamin C levels can be low, and can cause marked diminution in resistance to infections and slow healing of wounds. [Pg.10]

Extensive research has been done on the rate at which carbon dioxide might be converted to cellulose and other photosyntheticaHy produced organic compounds by various forms of natural and cultivated plants.
