For nonsmokers, the major routes of exposure to PAHs are from food and to some extent from inhaled air [661]. A number of investigations on PAH dietary intake have been carried out in different European countries [662-667]. Most of these studies indicated the group of fats and oils, together with cereals and vegetables, as the major contributors to the total dietary intake of PAHs [668]. Smoked and grilled foods may contribute significantly to PAH intake if such foods are part of the usual diet [663]. 

Hydrolysed vegetable proteins that have been obtained from acid hydrolysis (HVP) contain chlorohydrins [116] such as 3-chloro-l,2-propandiol (68, 3-MCPD). The European Union limits 3-MCPD in soy sauce and HVP to 20 pg/kg [117]. The level of 3-MCPD in other foods such as toasted bread, grilled cheese and fried batter strongly depends on the cooking conditions, especially the temperature [118]. Process...

Tofu is very versatile as a food it can be served fresh or cooked with vegetables and/or meat in thousands of different dishes and soups. It can also be further processed into various secondary tofu products, including deep-fried tofu, savory tofu (Fig. 14.2), grilled tofu, frozen tofu, dried-frozen tofu, fermented tofu, etcetera. In most cases, these processed tofu products have different characteristics, end uses, and commercial identities from the original plain tofu discussed previously.

Meat loaf is a favorite everywhere, loved for its economy, ease, and flexibility. Go basic with mashed potatoes and gravy, fancy with grilled vegetables and capelhni (angel hair pasta), or enjoy it cold on a next-day sandwich This is the way my mother made it, but once you master this recipe, improvise and customize to your hearts content. Wrap it in bacon, glaze it with sweet and sour sauce, top it with ketchup and hot sauce, or spice it with garam masala and serve it with basmati rice. 

Flatbresds. Generally lower in calories than thicker breads, these chewy wraps are ideal with hummus, topped with sliced olives, or filled with cream cheese and cucumber. For a nutritious and delicious sandwich, fill a flatbread with grilled vegetables sprinkled with olive oil.
