A major factor contributing to the variability in vitamin C content of potatoes is the storage time. Augustin et al. (44) reported a sharp decrease in the vitamin during the first 4 months of storage of potatoes at about 7°C and 95% relative humidity. Over the next 4 months there was either a complete leveling out or a less pronounced decrease.
