Sodium L-Ascorbate

The DAG conversion to L-ascorbic acid also can occur by a base-catalyzed mechanism. Methyl 2-oxo-L-gulonate (methyl DAG) is converted, on treatment with sodium methoxide, to sodium-L-ascorbate, which is then acidified to L-ascorbic acid. Various solvent systems have been evaluated and reported (46).

Description, identification, specifications, and tests of L-ascorbic acid and sodium L-ascorbate are given in the U.S. Pharmacopoeia 15) and the Food Chemicals Codex 16). Similar information on palmitoyl L-ascorbic acid (ascorbyl palmitate) is contained in the Codex. Sodium ascorbate is twice as soluble in water as ascorbic acid. Ascorbyl palmitate is soluble in ethanol (25°C) at 12.5%, in hot (80°C) glycerin, propylene glycol, or decaglycerol octaoleate to 10%, in vegetable oils (25°C) at 0.01--0.1% and in water (70°C) at 0.2%. 

Crystal structures of L-ascorbic acid varying from coarse to ultrafine powder constitute the major commercial product forms of the compound, followed by special coated and granulated forms. Sodium L-ascorbate is also produced in granular and powder forms. Limited production of other forms such as calcium ascorbate and ascorbyl palmitate depend on demand of these products in specialty use applications.

Much progress has been made in recent years in the chemistry of ascorbic acid. At least six new syntheses of L-ascorbic acid have been devised since 1971. One of those methods was used to prepare specifically labeled L-ascorbic acid to investigate its biosynthesis in plants. Proton magnetic resonance at 600.2 MHz has shown that the side chain of L-ascorbic acid and its sodium salt in aqueous solution adopt the same conformation as crystalline L-ascorbic acid. The conformation of crystalline sodium L-ascorbate, on the other hand, is different.
