Almond Oil (Valencia sweet-almond oil). The saponification value is sometimes as high as 198 to 200. The other significant production method for natural benzaldehyde involves the steam distillation of bitter almond oil which has been derived from the kernels of fmit such as apricots, peaches, cherries, plums, or pmnes. The benzaldehyde product obtained in this fashion is claimed to have a superior flavor profile. Aside from chemical synthesis, benzaldehyde is obtained mainly by retroaldol reaction of cinnamaldehyde (extracted from cassia oil or cinnamon bark) [91,92] or by enzymatic hydrolysis of amygdalin (extracted from peach or apricot kernels, or from bitter almonds) [93]. The latter process requires large quantities of the natural starting material and also generates HCN as a toxic side-product, which must be completely removed from the product prior to marketing and use.
