The fructosyltransferase mined from the commercial preparation Pectinex Ultra SP-L is quite stable towards pH, temperature, and the presence of chemicals. The A aculeatus fructosyltransferase showed a high transferase hydrolase raho that provides it with great potential for oligosaccharide synthesis.
