Journal of Home Economics

An article in the Journal of Home Economics really caught my attention. It said that boiling foods causes loss of 48 percent of the iron, 31 percent of the calcium, 46 percent of the phosphorus, and 45 percent of the magnesium. I don t believe that it s any accident that iron, calcium, and magnesium are three of the foremost mineral deficiencies among adults in this country. [Pg.115]

Among the important journals in this field are the Journal of Nutrition, Journal of the American Medical Association, particularly the section of the Council on Foods, Journal of Home Economics, Journal of the American Dietetic Association, and the American Journal of Public Health. An interesting quarterly is the Nutritional Observatory, published by the Heinz Co. There are also a host of pamphlets, articles, bulletins, circulars, and reports published by governmental agencies—federal, state, and municipal. Many trade journals publish such articles. [Pg.236]
