This method of phytochemical reduction may also be extended to homologs of thioacetaldehyde. In this way Nord converted the ammonia derivatives of n-thiobutyraldehyde and thioisovaleraldehyde to n-butyl and isoamyl mercaptans, respectively. 

Removal of carbon radicals is slow when irradiated ribonuclease is treated with molecules larger than H2S such as chloroform, isopropyl cyanide, and isoamyl mercaptan. For isoamyl mercaptan (15 torr, room temp.) less than half of the carbon radicals react in 3 hours (Figure 2). However, after 144 hours all radicals have reacted. The use of large radical scavenger molecules for studying the conformation of proteins in the dry state is discussed later.

In 1986 the largest ever smell survey was carried out involving 1.5 million people from all over the world. They were given scratch and sniff cards and a questionnaire to answer. The scents tested were androstenone, isoamyl acetate (banana), glaxolide (a synthetic musk), eugenol (cloves), rose, and a mercaptan (the one added to natural gas to make it detectable). Of those who took part, 50% were able to detect all six smells and only 1% could detect none of them. Women were found to be better than men. The smell that was sensed the least was androstenone, and if this really is a human pheromone then it does not operate by having an irresistible odour.

The impact of a compound cannot be predicted from its OAV value, but is the result of the interaction of the odorant with the other odorants present in the mixture. In general, experience has shown that impact compounds, whenever they exist, are odorants present at concentrations higher than the threshold and showing, usually, an odor quite different from the rest of odors present in the wine and demonstrating a personal character. For instance, out of all fruity esters of wine, only isoamyl acetate and phenylethyl acetate, both of which have clear specific and differentiable aromas, have been found to be able to act as impact compounds (Van Wyk et al. 1979 Tat et al. 2007). Similarly, the three mercaptans derived from cysteine, 4-methyl-4-mercaptopentan-2-one, 3-mercaptohexanol and 3-mercaptohexyl acetate, all of which have specific aromas, have been found to be key compounds in some wines (Darriet et al. 1995 Murat et al. 2001 Ferreira et al. 2002a Campo et al. 2005). 

The addition of mercaptans to thebainone-A is analogous to the addition of isoamyl and phenyl mercaptans to a /3-unsaturated ketones of the benzalacetone type, which has been reasonably explained as a 1 4-addition process [11-12], The formation of [xiv] from /3-ethylthio-codide no doubt occurs by 1 4-addition to the diene system, and from [xii] by addition of mercaptan to the carbonyl group followed by elimination of water, or by the condensation of mercaptan with the enol form of the ketone [3].
