Extract fresh food samples whenever possible. Grind solid and/or dehydrated soybean products in a grinder or with a mortar and pestle until a fine powder (one that can pass through a 50-mesh screen) is obtained. Mash moist soybean product to a fine paste. [Pg.1291]

Peanut Butter Clyde likes to push the button on the fresh organic peanut butter grinder in our local grocery store. In natural peanut butter like this, the oils separate and can cause uneven results in baking. For that reason I prefer to use a blended peanut butter such as Whole Kids from Whole Foods. Because it contains organic binders, the oil and peanut butter won t separate, keeping it smooth, creamy, and perfect for recipes. Whole Kids peanut butter is organic and inexpensive. [Pg.22]

Preheat the oven to 350°F. Spread 2 cups whole almonds in one layer in a baking pan, and toast in the middle of the oven for 12 to 14 minutes, or until the skins start to darken and toast. Rub the almonds in a damp dishtowel to remove most of the skin. It s okay if some skin remains. Let cool completely before grinding. In small batches, grind the almonds in a clean coffee grinder, mini food processor, or nut grinder until fine and powdery, taking care to make sure that the nuts near the blade don t get too hot and turn into almond butter Extra ground almonds can be stored in the freezer for up to 3 months. [Pg.65]

Note Throw blanched almonds into a food processor or a cleaned-out coffee grinder and grind until as fne as possible, being careful not to overgrind them, creating nut butter. [Pg.173]

A meat grinder technique for measuring meat tenderness was reported by Miyada and Tappel (1956) in this method, power consumption of the meat grinder motor was used as a measure of meat tenderness. The electronic recording food grinder described by Voisey and deMan (1970) measures the torque exerted on a strain gage transducer. This apparatus has been used successfully for measuring meat tenderness. [Pg.229]

Soon to follow the stone grinder were the roll crusher and lump breaker. While still in use today, the roll crusher is more apt to be found size reducing rocks and other aggregates in a more industrial setting. The lump breaker similarly is also commonly used in the food industry although it is still occasionally used in the pharmaceutical industry for size reducing agglomerates. The pharmaceutical industry demanded a more refined approach to repeatability led to the invention of the hammermill, oscillator, and conical screen mill. [Pg.187]

Many spices are plant derived and may cause allergic contact dermatitis. A worker in a foodprocessing plant reacted to carnosol extracted from rosemary (Rosmarinus officinalis) [296]. Sensitivity to spices is covered in more detail in the section entitled Bakers, Chefs and Salad Makers, Sixty spice grinders studied had no allergic skin problems [297], and while I have seen food-processing workers who were allergic to spices, the problem is probably not common. [Pg.751]
