A more complex flavor development occurs in the production of chocolate. The chocolate beans are first fermented to develop fewer complex flavor precursors upon roasting, these give the chocolate aroma. The beans from unfermented cocoa do not develop the chocolate notes (84—88) (see Chocolate and cocoa). The flavor development process with vanilla beans also allows for the formation of flavor precursors. The green vanilla beans, which have Htfle aroma or flavor, are scalded, removed, and allowed to perspire, which lowers the moisture content and retards the enzymatic activity. This process results in the formation of the vanilla aroma and flavor, and the dark-colored beans that after drying are the product of commerce. [Pg.18]

High purity hexafluorozirconic acid and its salts are produced by Advance Research Chemicals of the United States, and Akita and Moritta of Japan. The technical-grade green-colored material is suppHed by Cabot Corp. of the United States. In 1993, the U.S. market for fluorozirconic acid was about 250,000 kg/yr the world market was less than 500,000 kg/yr. A principal part of this production is consumed by the wool, garment, and upholstery industries. The 1993 price varied between 2.4 to 6.6/kg depending on the quaUty and quantity required. Potassium fluorozirconate [16923-95-8], K ZrF, is commercially important the world market is about 750,000 kg/yr. The most important appHcation is as a fire-retardant material in the wool (qv) industry, for the manufacture of garments, upholstery for aeroplane industry, and children s clothes (see Flame retardants). Chromating Chromating is considered in Section IS.3. The chromate film on zinc is adherent and can be drab, yellow-green or colourless in appearance the colour varies considerably with the method of application. A review by Bailey and Swain ( ) cited several references which indicated nitrite was responsible for cured meat flavor. These same authors presented chromatograms of volatiles from cured and uncured hams and while the chromatograms were similar, some quantitative differences led to the conclusion that the major difference due to nitrite was its reactivity to retard lipid oxidation. Greene and Price ( ) suggested, however, that sodium chloride was the major factor responsible for cured meat flavor rather than sodium nitrite or an absence of lipid oxidation. It has been concluded from other recent work (2) that nitrite was necessary to produce a typical ham aroma and flavor as well as to retard the development of off-odors and flavors during storage of cooked cured meat. [Pg.293]

The need to evaluate alternatives often arises once the decision to eliminate chemicals of concern is made. Sometimes a chemical of concern can be eliminated through product design such as through the use of a material that is inherently flame retardant or a fabric barrier without the need for added flame-retardant chemicals.
