Special Food Tests. These may be both Model Tests and Utility Tests. Following the application of the tests above, a knowledgeable reasearcher will be able to assess with some certainty which of the food system Model Tests are worthwhile. It has frequently been noticed that regardless of mediocre results in the Model Tests, many researchers will still try to evaluate their products in the more specialized food system Model Tests, in which the tested product will inevitably fail. The tests include meat emulsion system tests, extruded product tests, baking system tests, dairy product tests, and coacervates. [Pg.9]

Requirements for cans for beer and soft drinks differ from those for food cans in that (a) only low tin and iron contents can be tolerated in the product and (t>) the anticipated shelf-lives are much shorter. Specialised lacquering techniques including striping the seams are used to give complete cover to the metal. For soft drinks it is sometimes possible to select colouring matters and acids least likely to give rise to corrosion troubles, and rapid methods of testing formulations have been devised . The tests generally involve some form of maze but the simplest is the passive avoidance test. In this the animal learns that in a certain environment it will be punished with an electric shock for some particular action, like stepping onto a special part of the floor of the test chamber. The test of memory is how long the rat avoids (remains passive to) making the movement that will initiate the shock. Of course, drugs that reduce the animal s anxiety also modify the response. Using a maze in its simplest T shape, the animal is placed at the base of the vertical arm and a food reward at the end of one of the horizontal arms. Clearly the animal has to learn which arm contains the reward. Memory is assessed by the time taken for a food-deprived animal to reach the reward and the number of false arm entries. Experimental evidence in humans is based upon intervention studies with diets enriched in carotenoids or carotenoid-contaiifing foods. Oxidative stress biomarkers are measured in plasma or urine. The inhibition of low density lipoprotein (LDL) oxidation has been posmlated as one mechanism by which antioxidants may prevent the development of atherosclerosis. Since carotenoids are transported mainly via LDL in blood, testing the susceptibility of carotenoid-loaded LDL to oxidation is a common method of evaluating the antioxidant activities of carotenoids in vivo. This type of smdy is more precisely of the ex vivo type because LDLs are extracted from plasma in order to be tested in vitro for oxidative sensitivity after the subjects are given a special diet. [Pg.179]
