Floral water

When considering quality and composition of an essential oil the method of extrachon plays a crucial role. An essential oil is that oil extracted from plant material that is volatile at room temperature, but there are a number of other products whose nature and means of production need to be clarified - absolutes, resinoids, tinctures, floral waters, etc. (see Fig. 4.1). 

Hydrosols (or hydrolat or floral water) comprise the water collected from distillation of plant material used to extract essential oils. They contain water-soluble plant extracts and usually contain a tiny proportion of the essential oil. Their properties are often similar to those of the corresponding essential oil, but owing to their dilute nature they are considered to be gentler. 

The definition and term essential oil is widely understood and accepted. However the associated aqueous products currently present a more confusing situation. The most commonly encountered names are Hydrosols, Hydrolats and Floral Waters.

Dioscorides, in his De Materia Medica, discussed the components of perfumes and their medicinal properties, providing detailed perfume formulae. Alexandrian chemists were divided into three schools, one of which was the school of Maria the Jewess, which produced pieces of apparatus for distillation and sublimation, such as the bain Marie, useful for extracting the aromatic oils from plant material. Perfumes became more commonly known in medieval Europe as knights returning from the Crusades brought back musk, floral waters, and a variety of spices. 

Gin sort of has an aromatic floral edge to it, and they complement that nicely, Mr. Stuart said.
