Flavoring agents propionic acid

GRAS listed. Accepted for use in Europe as a food additive. In Japan, propionic acid is restricted to use as a flavoring agent. [Pg.618]

Propionic acid is used in the prodnction of propionates used as mold inhibitors and preservatives for grains and wood chips, in the manufacture of fruit flavors and perfume bases, and as an esterifying agent. [Pg.109]

Bal Ischmiester and Dereksen ( ) reported nine alcohols isolated from a steam distillate of peanuts. Brown et al. (62) resolved extracts from roasted peanuts into various fractions via classical chemical techniques. A number of acids were found, including acetic, propionic, isobuyric, isovaleric, valeric, heptanoic, decanoic, lauric, myristic, phenylacetic, and dihy-droxynapthaleneacetic. Carbonyl compounds reported were hexanal, 2, 4-decadienal, and 2-oxooctanal. Tentative evidence was presented for aliphatic lactones, which are powerful flavoring agents. [Pg.156]

Propionic acid INS No 280, FW 74.08, Chem. name propanoic acid, ethylformic acid. It occurs in food as a result of natural processing. It can be fonnd in some cheeses np to 1%, prodnced by several bacteria or fungi [46]. The functional nses inclnde preservative, antimold, antirope agent, flavoring agent. The ADI is not limited for propionic acid. Its activity is pH dependent and it is commonly used in packaged bread in the quantity of 1-3 g/kg [47]. [Pg.323]
